After playing a good 20 games with Son 88 rated I have to admit I was wrong.He's awesome, got a great animation to him where he skips past tackles with a burst of speed.
Can't take any credit for the team it was Quinnay's team that I stole from him. I was concerned with the lack of speed with the fullbacks but no complaints so far. Had a read on Reddit about some defending techniques the bowl paragraph made sense to me

One On One - Breaking Down The Wing.
Now if the Opponent is breaking down the wing, it's likely that their pace is greater than our defenders and that they will easily win the race. What many of us tend to think here is; the closer I get to this player, the best chance I have at winning the ball. This couldn't be more wrong, as you are chasing you are inevitably sprinting. As you approach the attacker you have momentum, while he is usually in a position to overcome this. A simple body feint, cut inside, or scoop turn leaves you in a world of trouble as your defender needs to lose the momentum before he can turn around and apply pressure again.
Instead, we want to narrow the angle again, come in alongside the attacker, but with enough space to react if they attempt to cut inside. Follow the same logic here, back towards the goal, facing the ball and using the L2/LT. if your opponent moves forward, take a small step back, eventually they will need to pass around you or overcommit allowing a simple tackle.
