As Raymond says you are going to have to compromise.
Your stated needs of vlogging, landscape and wildlife are usually specialities in their own right.
One camera that might be able to do all three well is the Sony RX100 mk 7. It has the 180 flip up screen for vlogging, 24mm on the wide side for landscape and 200mm zoom to get you closer to wildlife.
They go for ~£800 used in great condition.

If your vlogging just use your phone + gimbal. If vlogging at home/studio, then get some LED lights, & DJI mic mini.
The above would produce better results for everything but photography.
The A7's tend to overheat doing video. To make my A7IV work, I had to have an 80mm fan blowing on the back of the camera.
If however you are serious about photography, I would use a dedicated photo setup.

That’s not a bad idea to use my phone. It’s worth a try even thoughts it’s an iPhone 12 Pro Max. I think I would rather buy a dedicated camera overall. Even those 360 Cameras looks okay.

Lumix S9 is worth a look. Does everything you need (not ideal for wildlife though due to size and no mech shutter) and seems to be crazy cheap regularly.
I got one for £600 with a lens before Xmas.
Flip out screen, 6K open gate video, excellent AF.

No I mean will you be action vlogging outdoors or just sitting indoors? Very different vlog cameras would be needed.

Maybe take a look at GoPros then. The GoPro Hero is £169.99:
I would buy separates, i.e. a cheapish vlog cam and then a proper camera for photography.
That’s not a bad idea. What proper camera would you recommend. Something like this.

Do you really want to hike with a 5D?
The bag I use is pretty big. I rather buy something that’s quality and I can upgrade with lenses etc.
If you’re going to buy then use OnBuy and buy it brand new cheaper.
Though I wouldn’t recommend a 5DSr now, especially for hiking, it’s heavy and adding older EF lenses will make you feel like you don’t want to take the camera with you after a few trips.

The 5D and the system it is on, whilst has a LOT of lenses and they are cheap, but the mount is "dead".
It will do a job, and a good one, but you need to think hard on whether you want DSLR tech as opposed to mirrorless mount.
