2011 BBQ THREAD!

Going to christen my new Weber BBQ next weekend. Going to experiment with jerk chicken and a sticky BBQ glaze.

Soy sauce and ketchup in equal measure and honey to balance out the sweet and savoury flavours. Then add whatever ingredients to liven it up. Jamaican has scotch bonnet, lime, ginger and allspice. BBQ I think will have chilli, garlic and lemon.

Any tips on a smoky BBQ glaze for ribs?

Reggae reggae sauce and honey i use, or if going mad i throw some hoi sin sauce and ketchup too.

Worcestershire Sauce
Tomato Puree
Mustard
Finely Chopped Garlic
Golden Syrup
Balsamic Vinegar

All in a small pan and simmer, turn it off and let it go cold which will thicken it up a bit, paint all the meat and then whack it on a hot barby :)

That sounds a good one, its too late for today but i'l try that next week.
 
i know we all try cooking on a bbq
but has any one tried slow cooking by smoking?
you see some of the yanks, and they can smoke a BBQ pork shoulder for about 5 hours and it just falls off the bone.
 
Guess going to get a thermometer this year and a charcoal chimney starter and of course wood chips this time. Hopefully two weeks till proper BBQ like that. Could do with finishing the BBQ of but I'm lazy.
 
tidied the garden up today, still a lot of work but looking forward to having more bbq's than ever this summer:D

on the lookout for some mouthwatering chicken marinades, garlic, piri piri, bbq or something... but the piri piri needs to be better than the nandos stuff or i'll just use that :)
 
I see flames, is it odd BBQing just for yourself?

Don't get to excited only tesco burgers and chicken. Just couldn't sit inside any longer with it being sunny outside.
