2011 BBQ THREAD!

Acid, you definitely need to cut the groves out of the lid for full on rotisserie style bbq'ing.

Could get full on suckling pig on the go etc.
 
Looky what I have tomorrow.
I wanted short beef ribs as well, but they didn't have any and never even heard of them before. However he did guess correct on what they were.

Also got loads of stuff free as it was the end of the day and lots of stuff half price like the kebabs, also got sausages and 3 or 4 different flavoured burgers. I was asking for 4 of each and he was like theres only 6 burgers left anyway. I'll only charge you for the 4 and there's only 1 or 2 of these sausages left, just have them. Still spent £45.85 though :eek: just on meat. Only 6 of us tomorrow at the moment. So unless more turn up, might be BBQing Monday as well. As usual Ribs will have anout 4 hours on the BBQ.

But star of the show are these king ribs. £19 worth, 3.32 kilos at £5.99
6 tablespoons ice tea
3 tablespoons sugar
3 tablespoons dried mint
3 tablespoons paprika
1 tablespoon salt
1 tablespoon black pepper
3 tablespoons bourbon

Don't forget to remove the membrane, pierce with something sharp, them pull away with pliers.

Marinade and put in a bag with any extra marinade

wrap up well and leave over night in fridge

Meaty ribs this new butcher i found calls them you get 5 ribs on each portion, i got 7 lots and some very tasty lean pork chops and some chicken thighs, all mine are in the bags marinading ready for tomorrow :)

Big big squirt of honey, im talking big
Reggae reggae jerk sauce, half bottle
Tomato ketchup 1/4 bottle
HP hint of hickory woodchip sauce 1/4 bottle
 
That beef looks stupendous! Had forst BBQ of teh year last weekend, butterflied lamb marinaded in rosenary, garlic and olive oil, works really nicely barbecued.
 
having a bbq on friday, in need of some marinade for meats that are quick and dont take hours to cook.

pref for ribs steak and chicken.

over night marinating is ok but stuff that dont take hours to cook.

thx for suggestions.

bourbon
butter
lemon juice

I'm aiming for 200F-225F which is 93c-108c, so spot on where the thermometer is, but I bet the end by the coals is a lot hotter.

Damn I miss having a BBQ! should have one in a couple of weeks though; then I'll get posting.


I don't want to spoil the level of food in discussion here... but does anyone else BBQ minute steaks / sandwich steaks? They're dirt cheap, thin rolled sheets of beef which cook in seconds. They usually come in boxes of 10, or 50 - frozen. I always throw some on as the BBQ is settling down or warming up as kind of appetisers. not filling so wont ruin your meal but damn they're nice (for what is essentially junk)

Just got myself a chimney starter (just the £9.99 one from homebase) absolute godsend! Pour brickettes in, stick a firelighter underneath and come back in 20mins for perfect coal. Should have got one years ago!

Im also in the market for a new bbq as the cheapo one i currently have is in a bit of a sorry state. Is the Weber One Touch Premium worth the extra money over the standard Weber kettle? From what i can work out the only difference is just a self cleaning bit on the premium.
