Intel don't need, but SHOULD have a octo core in mainstream by now. Q6600, 65nm launched Q1 07, 4 years later, still on quad cores and they won't do mainstream octo cores till almost 6 years later.
In the core race AMD will win, but THIS is one of the problems for AMD - they can innovate as much as they like with new features (I'm still interested in what the AVX instruction set will give us!) but Intel set the standards for software to follow. At the moment Intel are milking the High core speed / single thread scene (not much left to go though!)
software will only follow ensuite with hardware as they dictate
For example: Most hardcore enthusiasts are gamers - games are mainly ported crap from consoles these days (using only three cores at best!) and Intel know you only need four cores to keep that scene in check...
