Anova Precision Cooker - cook sous vide with your iPhone.

It's the equivalent of a 'dedicated set up', it's just different. Instead of a set sized stirred or unstirred bath, these can be used in a variety of sized containers so imo they're better. You can insulate gastronorms and get the best of both worlds.

I have an Eiffel Fresherpack Pro, iirc. Ones which can properly deal with liquids are £££ - you need a proper chamber vacuum, but there are ways to include liquids without... freezing them, using food bags and displacing the air, vac packing with an edge sealer with the bag hanging down, etc.

yeah i was thinking could easily knock up a big insulating jacket for a large pan.

i wasn't sure if they were decent as the workings in a dedicated bath or just a miky mouse kind of immersion heateretc which could be widly inaccurate.

It's accurate to 0.1c :) It's essentially as good as you're going to get for home equipment. Buying some lab grade circulator might be better though.
 
Ahh when i checjed the site before i only got a us version.

Must have ended up in the worng place as they were quoting for shipping from the us and dint want to get hit by duty.
 
Anyone teied the oliso vacum sealers seems a clever design and can yse the bags up to 10 times

(Zip lock bag and it pubches a gole to draw vaccum then seals a ring around tbe hole)
 
19 days after I ordered it, I finally got an email yesterday saying mine has been dispatched. I can only assume that everybody else who received theirs before me ordered the Bluetooth model and mine was delayed due to shortage of stock of the WiFi model. No sign of it on DHL's tracking page yet, so no idea when it'll get here.

11 days since dispatch and still nothing on DHL's page :(
 
Mine has been out for delivery twice but wasn't in. Redelivery tomorrow, fingers crossed.

Turns out it wasn't even through DHL and it'd delivery attempted a week ago! Picked it up this afternoon at the post office :D Really impressed with the quality and how well made it is - going to Budapest tomorrow so will have to wait till next Tuesday to try it out.

Also, has anyone done any cheap beef roasting cuts in it? (apart from brisket)

Ive got a queation regarding safety.


I work about 9 hour shifts.


Would it be possible or dage to say fill water bath put in either raw or precooked and frozen food in bags in the water. Go to work then turn it on from work at the right time it wpuld need to to cook/reheat.

Or would the time the food is sat there not being heated cause it to go bad?


Seen the hellomellow machine thats comming out later this year that has an integral water tank and refrigerate capabiloty so could stick stuff in and it would keep it cool till it was time to heat it up but expensive and kickstarter ao may never appear

A lot of things take that kind of time to cook through so I'd just do that. Leaving it in luke warm water all that time would be dodgy tbh. Perhaps you could fill the bath with water + ice so it stays at zero-ish for a few hours before the heat comes on.

Also, please spec me something delicious to cook for tonight! :) Cooking time no more than 5 hours and easily purchased ingredients as I can only pop to a regular supermarket today.

Yup, or even sandwich bags that you tie into a knot at the end (very tightly). Use the water displacement method. Just be sure that any bags you get are freezer-safe as that means that the plastic is also heat-safe.

If you like fish then try something like the below. Only 30 minutes in the water bath and also generates results that will be different to any fish you've cooked by regular means before:

Lovely stuff, thank you. Salmon bought. I was thinking of doing a simple tikka marinade (and having it with some dahl). I figure it should be OK putting in the bag in the marinade.

Marinade will be yoghurt, lemon juice, ginger, garlic, chili and spices. I would normally cook that in the oven.

What do you reckon? Or make a separate sauce?
