Bad idea to dive into this with a controller?

Yep.
I started with a 360 controller then bought a G27 wheel setup, which was awesome.
I've recently sold the wheel & tried Assetto the other night back on the pad...... 25 seconds a lap slower around Spa in the F40.:mad:

Not one of my better decisions selling the wheel.
 
a tool for it which allows you to start at different points, so I started before the final sector and when driving I'd keep edging into the first sector of the next lap, learning it bit by bit too. Then I'd move back a sector and do that a few times, carrying on into the final sector, then again the start of the next lap.

I wish there was a tool like this in AC... I don't think it allows starts and restarts from some random point on a track.

No, I'm fairly sure there isn't. It doesn't matter where you start though, it just means it will take longer to get to the bit you want to learn. :p

In Assetto Corsa it's a case of doing it in your head, using trees and scenery to break the track up - things like the two carousels help too. Once you know which direction the next corner is it all starts to fall into place very quickly. I learned the Ring in GPL without the need for such a tool (I think there was a tool (Ring Trainer?), but I didn't bother using it).

So i finally managed to get around Nordschleife without crashing :D


EDIT : My driving has improved quite a lot since this video hoping to make another soon of the improvements
