would a good Mozzarella and (insert other cheese of choice) not be the a good combination to try? Grated mix of course, as you get the stringy-ness of the Mozzarella with the awesome flavour of whatever other cheese you pick?

That's why I suggested monterey jack and cheddar.
Monterey jack is stringy like mozzarella, but had a better flavour. Add some mature cheddar to the mix and you have a recipe for win.
 
I'm a big fan of Davidstow Extra Mature Cheddar. Tangy, crunchy, and creamy. Doesn't come ready grated, and probably doesn't melt too quickly, but it has to be the best cheddar known to man.
 
No Cheese. Can't eat the stuff right now, Sends me to the toilet quicker than women to January sales :(
 
I hate all of you, I hate you with a passion. As of 2 years ago, I developed an intolerance to cheese. Whenever I eat it I get really bad migraines.

I want a cheesey chip.
 
Surely one of those bags of pre-grated mozzarella and cheddar mix from virtually any supermarket would be ideal for this purpose?
