it's basically that the higher surface area provides more nucleation sites allowing more bubbles to form.If it is the bumps on the mentos, then I guess the increased surface area would be working as a sort of catalyist, allowing the dissolved CO2 to coagulate. Only guessing though, could easy be talking complete trash.
