Every time I think "best cover version" I still come back to this - the Jimmy Ruffin original is obviously an all-time classic, but to pick up a common theme from the comments, Joan Osborne "knocks it out of the park." Having the Funk Brothers as backup won't have done any harm either...

It's a shame Joan Osborne still tends to be associated with the miserable dirge "One of Us," she's so much better than that.
Unable to link it due to work restrictions but RHCP's Subteranean homesick blues is probably the only cover I would genuinely say is "better" than the original (Bob Dylan).
Maybe "somthing for the girl with everything" (the Faith no More / Sparks version) too come to think about it
Check these swedish guys out. Amazing covers of Adele, Britney and Bieber done in a fusion funk style. Ridiculous talent. Whether they're better or not is subjective, but the technical virtuosity of these 3 musicians is frightening.
