This is one of the biggest issues with VAR, too many pundits don't understand it. The fact that the offside was given doesn't mean they think it was offside, simply that it wasn't considered a foul for the pen under the clear and obvious criteria. And because it wasn't given as a pen, they automatically go back to the onfield decision which was offside, even if it wasn't.
 
I can only assume that the ref didn't actually blow for the offside, just that the lino flagged for it. The game only stops if the ref blows, not for the raised flag. In that case they can check whether it's a penalty using VAR and part of that check will involve checking the offside before checking the foul. As soon as they decide it's not a penalty (or a red card or goal in other situations) the initial offside check is scrapped because it's no longer relevant and the linesmans flag stands.

If that's the case it seems to me they took the easy option and it's a bit of mess awarding an offside after having checked and seeing it was a wrong decision, shouldn't it have been a goal kick from the keepers hands if they didn't think it was handball or penalty or do getting marginal offsides right only matter when it's a goal?

We only use VAR (including offside checks) for goals, pens and red cards so as soon as it's decided that it's not a penalty (or goal or red), the offside check is no longer relevant and we stick with the original decision which was offside. Without it being a penalty, the offside call became just another offside call and like the other 10 per game, it's not subject to var.

Why is VAR not giving Calvert-Lewin a red for that? Much worse than these hugely marginal offsides.
You cannot compare offside decisions and subjective decisions. It was probably a red but subjective decisions need to almost go unseen before they can be overturned under he current guidelines.
