Keep checking Arg*s, they seem to appear fairly regularly.

Running great here on a Vega 56, no OC. I'm around 2.5 hours in, and absolutely loving the combat and atmosphere.

Again I'd say why would you want to, the game was designed for VR with gameplay and mechanics that tie into that, fair enough for those that want to try but it's going to be a pretty rubbish experience.

Seeing as I havent got a VR headset or a computer that could power it (R5 3600, RX580) I've watched a complete play through and it looks amazing, I can see valve putting mouse and keyboard support in next year maybe, esp with the way the game ends.

I think your PC should be able to run it fine with those specs.

What about using an Occulus Quest with the link cable? these seem to be available in places.

Argos are showing them on eBay store as available but the seller says 'they are away' so I'm not sure how much I trust the order being fulfilled.

If youve got the gfx card grunt try upping the super sampling using oculus tray tools. Try 1.2 - 1.4.
