Put Ubuntu on my ultra-book, Mint had a few driver issues which I really wasn't in the right mindset of sorting out.

Nothing special.

My desktop looks pretty similar. I use the default Ubuntu desktop on my main machine across 3 monitors. Unity gets a lot of stick, but I quite like it.

Running Ubuntu 13.04 on a VM with Xubuntu Desktop; apt-get install xubuntu-desktop

Fairly stock at the moment:

Very clean UI which is very Windows user friendly,http://zorin-os.com/ .

Zorin is based on Ubuntu, very underrated Linux Distro IMHO.

that looks fantastic

i have just downloaded pinguy to try instead of windows 8 , any pointers on how to get it looking like that :D:D

Unintall Docky and install Cairo Dock instead. And then install the gnome shell theme http://www.noobslab.com/2012/05/install-malys-glassart-gnome-shell-34.html Just type the commands in a terminal.

You can find all custom themes and icons here
And get useful extensions here I've got a weather extension enabled in that screenshot which is in my status bar.
