Setting Ram timings isn't that hard, you just set the Rams rated frequency in the drop down menu, then go into the memory timing section and input your Rams rated timings, set the ram voltage to just above the rated voltage, this is the boot voltage, which is below the vcore voltage setting, and start off with IO at 1.1000v and SA 1.1500v..In the tweaker sub-section set eventual ram voltage to your rams rated voltage.

RealBench at stock settings will give you a starting point to work from.

Idling ideally should be at around 25-40c depending on cooler, case setup and ambient temps etc.

My 9900k idles at around 25-30c and max temp is around 70-80c on realbench at 5.2ghz for reference.

yeah is that after you deduct the ambient temperature?

The timings and rated voltage will be printed on the Ram Heat spreaders, and on the packaging/box they came in.

No that is what the chip is running at in real time as read in core temp.

Around 5-10c delta over ambient.

It's 50/45 on that run. It's dialed right in at this point, can't pass POST stress tests when lowering thirds anymore
