Hi Folks,

Got my 30th coming up and would like to treat myself to a couple of better quality knives as I am finding myself cooking more and more.

I have a Sabatier knife set from donkeys ago for dealing with the day-to-day/wife tasks, but would like to add a separate Gyuto and Petty (I think that these two complement each other pretty well?) for my own personal use.

The budget is £200 for the two and I am completely open to suggestions, and to be corrected on any of the above.

Judging by the recommendations in this thread I was thinking of these two:

https://thesharpchef.co.uk/collecti...3-layer-vg-10-core-210mm-gyuto-knife-fujitora

https://thesharpchef.co.uk/collecti...vg-10-core-150mm-petty-utility-knife-fujitora

Unless you kind lot can recommend anything better quality for the budget?

Thanks!

I would look at one good knife with your budget rather then 2 mediocre ones.

A 210mm stainless Gyuto would be perfect, have a look at these:-

Takamura VG10 Migaki 210mm Gyuto (thesharpchef.co.uk)

Misono UX10 gyuto knife 21cm 8 2" 712 (knivesforchefs.co.uk)

Misono 440 gyuto knife 210mm 8 2" 812 (knivesforchefs.co.uk)

Thanks man, I’m leaning towards the UX10. They get some great reviews!

The UX10 is one of my favourite western handled chef's knifes, great fit and finish, great blade profile and easy to sharpen.

I see them all the time in two and three star kitchen's!

A couple of questions and I will give you some suggestions:-

What are you going to use the knife for?
How will you sharpen your new knife?
What is your top end budget?

Thanks for the suggestions, I ended up going for the Masutani VG1 Nashiji in the end, mostly because I thought it looked pretty :)

I think, being totally honest that's a good shout. As long as it's made out of decent steel, of which there are many verities, and decent construction/handle then just pick one that you like the look of.

I just ordered the 3 piece set, as my kitchen knives are ratty and horrible. Seems a no-brainer for £20. Whilst not high end artisan Japanese steel, it's still good quality German steel.

Nice looking knife, that TOG one, I'd be interested to see what you think of the £10 nihon :D
I was going to buy some slightly more expensive knives, but I'm far from a chef!
