As there's no errors yet on memtest, I'm more than certain it's a VDDP voltage issue given OP's symptoms. If it takes a very long time to produce an error, that's more likely to be a configuration issue than a faulty stick.

That only tells you how the drive is performing, the SMART data is what you want. You can get it from Samsung Magician or CrystalDiskInfo. This is the Crystal Mark Retro result.
If you had a 14th gen CPU I'd say it was broken 'cos that's a typical bad CPU error, but for an AMD CPU a search just gives generic advice about checking memory config, drivers, blahblah.Oh I spoke too soon - Application Error 0xc0000005 is back.

Click the SMART button.I think I found the correct Samsung one, no problems with the SSD here:
So, where are you now then as I've lost track through the thread?
You've swapped the PSU but problem remains.
You updated the BIOS
You ran memtest with no errors
Have you tried running with the GPU removed yet?
Do you have another SSD to test with?
Have you done a full totally clean install of Windows?
Have you checked your CPU/mobo for physical damage e.g. bent pins in the socket?
Click the SMART button.
With CrystalDiskInfo, as Rob_B said, it opens on the SMART screen (so long as you select the right drive).
Yes to all of the above apart from the GPU. The crashes happen mid-game and I need the GPU running.
I don't have another SSD.
Chuck the motherboard and CPU in the bin and go back to Intel is the best plan I have currently.
GPU core & memory temps ok? 3080s were known for high mem temps.
If you've not run it without the GPU then does it 100% only happen in games? Do you use the machine for anything non-gaming for any length of time?
Click on vddp voltage control and set vddp at manual, then set the voltage to 1.1vThe VDDP voltage...
