Fusion is fine, it has a intelligent 128G SSD which stores your most used apps on there, the HDD part will be for less used stuff. For work, you should run an external back up anyway, I use a WD thunderbolt Duo for that.

I got a 32G pair from Crucial, 5% cash back when i got it too.

p.s. only the 21" model is solder on and NOT user upgradeable, the 27" still is and in fact very easy.
 
It's very unlikely that RAM will become non-upgradable in this generation of the iMac, but as Raymond said, the 21" isn't upgradable at all.

Metalface Mark, for your usage the Fusion Drive would be absolutely fine, the majority of stuff you'll access will be on the SSD anyway.
