Another pink Lady fan here, a good balance of texture, taste, not too sweet, but above all nice and consistent. Braeburn can be great or really bad, granny smith have a nice solid texture and are sharp and tangy.
Anything that is mushy, sandy gritty I hate. Needs to be a solid apple, firm texture, plenty of juice.
Fujis are great
I've always though pink Lady sounds a bit homo.
Personally, i find eating Cox a little homo and eating a Lady is pretty hetro

If you like something more sophisticated then some of the smaller British varieties are good but hard to find.
