*****Official BBQ Thread - Suns out, Buns out!*****

Had first BBQ of the year - tried a new local butcher.. really good rumpsteak, lots of veggies and all washed down with a 2006 Margaux.
 
Uncovered my two BBQs yesterday to find I hadn't cleaned them as well as I thought I had at the end of last summer, so a fair bit of mold. Spent about an hour scrubbing them down with boiling water, and after an hour a 200C, good as new. Couldn't help throwing some peri peri chicken thighs on, and did some spicy pork loins today.

Hope the weather is as good again next week and I'll get a long cook going. Must have been a few others who got going today or yesterday?

I was pleasantly surprised with myself about how organised I was at the end of last year as both my BBQs were spotless when I uncovered them. I'd forgotten I'd cleaned them so I was up early in preparation to get rid of the mold so had time for an extra coffee instead! :)
 
I don't have any photos unfortunately, but I smoked a 4.2kg boston butt for 16 hours on Friday night into Saturday.

I've been using pork shoulder from Costco for a while, but this piece was quite expensive from a really good butcher in Wales. It was so, so much better than the Costco stuff. It was moist without being fatty but at about twice the price, you'd expect it to be next-level :)

Will definitely be using them again.

The Rumpsteak was excellent - three 30+cm long and 10cm wide by an inch thick, freshly cut in front of me.. £31 including a few wild boar and apple sausages. To be honest the flavour was just right for the wine.

The mrs is french but doesn't drink so I will pick up a couple of bottles when over there. A mate's mrs doesn't drink either so when either of us BBQ the first bottle out is a good one followed by something to keep going. Unfortunately the Coates de Rhone wasn't even on the same planet after that.. for a 13 y/o bottle it was smooth as silk and perfect in taste.

Ive also seen a few with pizza ovens in as well. Some sort of combination one would be nice so smoker/bbq etc but I do not want a gas one.

What would you guys recommend? Also any essentials for a bbq starter? more often thatn not it'll be sued to feed about 4 people so doesnt have to be massive either.

I'd swerve the offset and get a Weber MasterTouch as your first. They're great for grilling and you can smoke on them just fine too. I used mine for everything until I got myself a WSM as well.

You should be able to pick one up for around £200 to £230 depending on colour. BBQWorld and Riverside are doing the grey one for £199 at the moment. A chimney starter should set you back about £15 and you're good to go!

I have been doing a lot of googling today and that was the one i kept seeing come up so may go for.

Depending on how windy it gets round your way consider the lid holder add on. Clips on the side and unsuprisingly holds the lid but also creates a windbreak in the process. Handy on breezy days when the coals won't take!

That came as standard on my MasterTouch, and yeh, it is quite handy!

I didn't bother with any other grills. I got a Weber griddle plate free with mine when I bought it but I've never used it. The only thing I bought was a set of cheap cast iron pans on Amazon that I could use on the BBQ.
 
As it's pie week next week, has anyone got any interesting pie recipes I can stick on the BBQ?

I was thinking of doing some sort of variation of this tomato pie but I need to have a look through my BBQ books and see if there are any others worth considering.

You could smoke some beef shortribs then braise them for a smoked short rib pie. Or smoke some chicken thighs for a smoked chicken pie. Not sure about actually cooking the pie on the BBQ though.

Personally I use good quality lumpwood rather than briquettes, the chimney starter is probably better for briquettes. For lumpwood I'd look for sustainably produced restaurant quality hardwood charcoal. Green egg brand is very good but very over priced. Often garden centres will do good locally produced stuff for less. I think briquettes are better for the longer lower temp cooks (snake method smoking for instance).

For techniques and recipes have a look at serious eats, or the BBQ pit boys.

I generally use Heat Beads for low n slow and get them from where ever is cheapest at the time, WowBBQ, BBQWorld, Hotsmoked etc. I've been using Big K charcoal for grilling, mainly as there was an offer on at Ocado. It's worth keeping your eyes open and stocking up when there are deals about. Wood, I get the bulk boxes from Amazon from Grilling Wood.

I've done loads of the recipes from DJ BBQs Fire Food book and they've all been good so far. The BBQ Bible is worth checking out as well. Get yourself on the Country Wood Smoke Facebook group too!

I'm quite jealous of buying a new weber, hope you enjoy it.

I use weber briquettes, normally pay around £10-£12 for an 8kg bag - they are normally more like £20 in most places so have to shop around.
