My parts have arrived:

One kit from PV electronics, 4 x IN8 and 2 x in 17 for the seconds.

Oh wow! Thanks a lot dude! I may have to ask you some more questions about it but that looks fantastic, and perfect as far as I can tell. Would you be able to tell me which components I'd need? I was looking at this variable resistor and this screen. You are fantastically helpful.

The audio tag means it's logarithmic. Looks like you're using a micro so you can correct it in code but make your life easier by using a linear type potentiometer!

I imagine an LCD or 7-seg with direct I2C and/or SPI interfacing will be the simplest solution if you are just displaying numeric data.

Best bet would be to head over to the picaxe forum and get them to check it over, I'm only just in the middle of working out how to use it myself so I wouldn't want to send you off in the wrong direction. The image I posted is a good starting point for them to help, usually they ignore posts if people haven't made an effort to have a go
 
Would anyone know where to put me in the direction of making an ultransonic emitter... similar to something that would go into those cat scarers? Have an interesting project in mind! ;)
