The thing is I don't have any problem with having ghosts aswell as Vikings with my MMM for the AOE units but you have to be incredibly quick with the EMPs because those ghosts are almost always certainly first to go when they're upfront to EMP the HTs where-ever they might be.
I get a lot of friends telling me it's collisi that they find hard to deal with but for me it's HTs due to it basically being instant damage on your army and not much to do about it.
This, collossus are simple retreat your army and swing your vikings around to get them to attack from the side.
My issue against HT's is for the most part i am quite a defensive player, im not yet good enough to be trading armies its usually win or loose in a single fight.. as a result the HT's usually come at me and storm me before i can EMP them... If i was the aggressive player and could get off some cloaked EMP's before the fight began things may go much better but thats easier said that done.
In PvP is it worth getting 3-6 phoenix out to counter 3 gate robo and lifting the immortals while your stalkers trade in early stages? Was thinking you can sweep to the mineral lines and harass after you win the battle and put them on the back foot. Not tried it so far though.
I thought Phoenix is only air > air unit?

Just bought the game (Skyrim and FM took up most of my days) is there a certain clan to go with Zerg, Protoss or Terran or are they all equal?
They are all fairly balanced, but each have a unique playstyle. A lot of it is down to personal preference.
At the highest levels of play there are arguments as to which race is the most powerful, but for the average Joe player they are so close it doesnt matter.

Protoss are by far the easier to play at a good level than the other two. Terran requires quite high micro and Zerg requires a lot of mechanics and a certain play style.
You will ultimately find the race you want to play and make sure to stick to one after a while or you'll find it hard to improve.

I started just fine with Zerg.
Your statement that Protoss are easy to learn may be correct, but your assertion that I am wrong is not.
My comments were regarding balance and not ease of use, your justifying point is completely tangential.
