How easy is it to customise android phones?
Can every part of it be customised (homescreen, sms, dialers etc etc)

Homescreen and SMS can be done without rooting via apps, yes. Not sure about the dialler.

It's very easy and yes you can use any dialler you want, any sms app, any homescreen app (launcher) and so on.

Just look at the screenshots in this thread. Some stuff like the top status bar icons are part of another ROM or added via the online theme kitchen, for these you need root but everything else is free roam pretty much.

Is there an easier way of doing it rather than installing the Android SDK? Like an app or something?

Orange San Fransisco running JapaneseJellyfish RLS 9, overclocked from 600Mhz to 768Mhz and idle clock dropped from 245Mhz to 122Mhz. Ignore the temperature level on setCPU, seems faulty as i've had it hit 56c before.

Using the Desire Sense UI with Thin Circle battery.

Only using 3 screens at the moment as i've no need for anything else currently.
