I don't really find the standard warm-up and clearing effort sufficient, normally it takes me a good 45-50 minutes to start fully firing on all cylinders with my weekday evening rides.

I struggle too with the warm up's not being long enough, I need a good 15 minutes to really get into the flow of things. I can go hard fairly cold but I do really find myself more stiff afterwards. Think that's a by product of my commuting .
If the majority of your noise is coming from the turbo spinning (it usually isn't)!So would ERG mode make the turbo quieter, by virtue of reducing the spin needed to make a target power?

This. The vast majority of noise comes from your drivechain and vibrations, not from the trainers brake.Trainer noise is dependent on speed not power - You could be at 300w doing 5mph or 50mph
The faster you're going the more noise your trainer will make.
