Christmas dinner with my dad and aunt. Prawn cocktail, turkey dinner washed down with a bottle of Bollinger. We're now having a bit of a rest before dessert
Turkey - rubbed butter, thyme, salt and pepper onto skin. Bunch of thyme and half a lemon in the cavity.
Potatoes & Parsnips - Par boiled then roasted in goose fat.
Pigs in blankets - proper sausages + streaky bacon.
Two types of sausagemeat stuffing.
Steamed carrots.
Sprouts - Sprout tops and sprouts, par boiled then added to fried pancetta and chestnuts. Finished with sherry and lemon juice.
Red cabbage - slow cooked and spiced.
Proper Gravy from all the juices and meaty bits.
Home made cranberry sauce - fresh cranberries cooked down with orange juice and sugar.
Sorry no pictures, but the Turkey for dinner today was amazing and anyone who says Turkey breast is dry needs to learn to cook it properly as mine was so juicy it was unbelievable considering it was only a 2kg Crown with 500g of stuffing in the neck and I cooked it for 3 hours!
(1.5hrs covered at 140c, 45 mins covered at 160c, 45 mins uncovered at 180c - fan assisted).
Also made home made gravy for Christmas dinner for the first time ever - turned out surprisingly well for a turkey/vegetable gravy.
Not sure exactly what these are but its nice. Currently tucking into the coffee bean one. The chilli one is also nice, chilli and chocolate isnt a combo i'd have thought would work, but it seems to work very well.
going to dream well tonight, an 18 cheese cheese board, whilst watching night at the museum 3. and non of your standard supermarket stuff. some quite unusual stuff from cheese shop and some goats cheese from a mates small holdings.
Sorry no can do, it was demolished, maybe able to get a partial list tomorrow off my sis, the only ones i knew was a motagnola, yarg and dolcelata. rest i eat blind. just piled the plate high and dug in.
