The **Now Eating** Thread

Just gone into the oven - Hairy Dieters Skinny Lasagne :)

Unfortunately it was after I organised all my ingredients and chopped and prepped everything that I noticed it was a recipe to feed 6... Guess there'll be lots of leftovers for the 2 of us to have for lunch/dinner tomorrow!

It was OK. The thing that makes it 'skinny' is that there is no oil used and you use slices of blanched leeks to replace the lasagne sheets, and just a little grate of cheese on the top. We really missed the pasta! It was all a bit wet and sloppy and in need of pasta. Hey ho - TONS left over so maybe I'll enjoy it more tomorrow :(

Couldn't bring myself to eat the lasagne for lunch! Instead we had some leftover chicken from Wednesday night, so I threw it in a pan with spring onions, cherry tomatoes, chorizo, peas, loads of fresh coriander, chilli flakes and a spoonful of pesto.

Was delicious! I love throwing things in a pan to make a concoction. :)
