It's galbani mozzarella cucina, comes in a square block which makes it easy to slice. Also it's a lot dryer than mozzarella packed in fluid so it seems to work better for cooking at oven temps, i'm not sure how it would perform in a hotter Pizza Oven.

We use it for pizzas but cut into "slices". Works great in a pizza oven. compared to the fluid packaged ones you have to dry out before using.
