Im not 100% sure the procedure for unlocking the POCO but for my redmi note 10 pro..
1) Unlocked the bootloader using the miui unlock tool
2) You can flash miui back and return to stock if needed
3) Banking apps, NFC all works but this depends on the custom rom your installing.. Im using PixelOS
4) No cons for me at all, everything works such much better on the custom rom but again it depends on your device and which custom rom you install.

As for the android auto wireless issue its well documented in various forums, and is the same if your using a aawireless device. They just dont want to address the issue in miui and this is why
its been broken for so long.

Its a device that gives you wireless android even if your head unit doesn't support it

I just had a look at the latest Pixel phones (6A, 7, 7 Pro) in comparison to my current 2 and a bit year old POCO F2 Pro. I did a comparison using GSMArena specs/details/benchmarks. You have to go all the way up to the 7 Pro to actually get a decent upgrade over the POCO F2 Pro in my opinion. I know the POCO F2 Pro was decent at the time, but it's just reminded me how good it still actually is. It has better battery life than any of the Pixel phones and mine is still fairly strong. I think I'm going to flash a decent AOSP ROM on it to fix AA Wireless and run it for another year or so. I can't be doing with the prices of the Pixels either right now. I've never felt this phone lacks anything for me...well... apart from AA wireless working!

Im exactly like you, my redmi note 10 pro does everything i need it to do, it just had a few issues with miui. Flashing pixelos onto it has made it a totally new experience and theres no need to upgrade now.

Looking at the log file the error I'm getting is

Googling error just points me to trying steps I've already tried. So frustrating. Think only option left is to contact Xiaomi direct but not sure how much help they will be.

Thanks for the reply. Yeah I then get message along the lines of "Mi account now associated with this device". I then shutdown and reboot in fastboot. Did this with wifi disabled as instructed.

I'm now wondering if it's because I debloated my phone? Maybe I've disabled/removed something stopping the bootloader to unlock but surely something like that wouldn't easily be disabled?

Debloating shouldn't affect it. Do you have to wait 7 days to unlock it?

I believe the 7 day wait happens after you've initially unlocked bootloader with mi unlock. I'm not even getting that far sadly.

I've had phone about a year now but haven't been signed into my mi account until trying to unlock the bootloader.
 
Did you sign into the unlocker app on your PC?
On the phone there might be 2 places to sign in. In the accounts section and then in the developer unlocking section.

This is correct, you have to sign in to the miui account under the normal settings (cant remember what its called as im now on pixelos) and then sign in under developer settings also.

Thanks both. I can confirm I signed into my Mi Account in Settings -> Accounts first with wifi disabled and then followed the steps in this video:

My mi account I'm signed into on phone matches the one in the mi unlock software on my pc.

At 2:47 in the video instead of the unlock timer message I'm getting this:

Not sure what else I can do. Tried different cables, windows 10 and windows 11. Intel and amd cpu.

Phone bought from Amazon direct and has global EU rom so should be legit.

Solved this. Created a new Xiaomi account with region set to US. No VPN required. Even let me use my UK phone number.

Btw you have data on your SIM right?

You know? I didn't think that would make any difference but thought I'd give it a go and that has worked. I now need to wait 168 hours to unlock but its progress.
