Alright I'm back from the 3 store.
The Edge is definitely the one to go for. Looks and feels so nice in both colours. The height is a little more than the Z3/Z5 but the rest looks the same in the flesh although the Edge feels thinner due to the curved glass and back. To get this kind of form into a 5.5" screen versus a 5.2 is pretty outstanding.
The camera loads, focuses and takes pictures near instantly. Surprised how quick it is and the dual pixel AF grid tracks subjects all around the screen which looks cool as hell.
Enabling video stabilisation disables focus tracking though and also enabling stabilisation decreases the video mode field of view (crops in) so I don't believe the S7 has a pure OIS implementation and is more like the hybrid found on the Z5.
1080p is 60fps. The in store charging cable connected wasn't fast charging and at 33% was saying a but over 1hr left until full so I expect fast charging methods to be even quicker.

The demo models were running retail demo software so could not do any photo samples etc There was no lag or stutter at all.
