I have a Sapphire Vega 56 and ran it for a week or so before putting an EK water block on it. During that time I had a stable overclock that would boost to 1600 mhz Gpu and 945 HBM. volts of 1050 P6, 1100 P7, +50% power limit.
Fan max 2800, temp target 75. Performed well, but boy does it throw out a lot of heat from the back of the case and I didn't like the noise of the blower much either.
Since I put the water block on and flashed it to vega 64 air bios, I can get 1100 on the HBM (although I like 1070 ATM) solid boosting to 1640 mhz and gpu/HBM temps max mid 40's, hot spot 15 deg above. It will go higher but this is really stable for 24/7 Gaming for me - (BF1 that stresses your system to the max).
These cards run really hot and are very temp sensitive and I highly recommend water cooling if you have a custom loop. If not, then just try the above 56 air settings I found for around max performance but push that fan max up to keep the temps down and don't under-volt it too much and hope your DP cable doesn't melt lol.
