Did you have it wicked correctly? Leaking is mainly due to too little wick in the coil.
Get it out the bin and give it another go man, you're missing out. It's a great tank.

I have an iStick Pico with a Melo 3 mini I've screwed with the settings, is there anyway I can "factory reset" it?
Also I need some coils for it currently has a 0.3 (30/80w) coil but @ 25w can burn the back of my throat should I go for a 0.5?
And any recommened online shops I can get 3mg juice from would be great

If you want cheap liquid get shortfills or bottle shots. Much cheaper than anything else. You can get a 50ml shortfill with a 10ml 18mg nicotine shot which will give you 60ml of 3mg liquid for about £15. I tend to get my liquid from Vape Club for shortfills / normal pre-mixed e-liquid and Darkstar for bottle shots.

Already quite cheap and they seem to throw in 3 free 10ml bottles every time I order from them too!
The bay is generally cheapest but be sure to check seller ratings and buy small amounts first to check juice is legit.
Ultimately bottle shots are the way to go-250ml, 4x10ml 18mg nic shots and top up the bottle with VG shake it and leave it to steep recommended time which is usually 7 days for fruit flavours outlay probably costs about £15 for 250ml of juice.

Where do you get your bottle shots? Been using Boss shots lately but find the flavours hit and miss, found a few nice ones though.

So I got some raspberry sherbet 80vg/20pg (not sure if vg/pg matters) and tried it in my pico @ 15w but it burns the back of my throat I do mouth to lungs
Am I doing something wrong? I've ordered some 0.5 coils for it but I can't understand why its burning at such a low wattage with 3mg of nicotine

Vegatable Glycerine and Propelyne Glycol, some tanks/atomisers will struggle with high VG liquid as its thicker. Generally more VG = thicker liquid with more clouds and smoother. More PG its more viscous, wicks easier, can give more flavour and has more of a throat hit.
Coil might be knackered or it cant handle 80/20 or its crap liquid.

That tank/coil may just not be able to handle that juice.
The resistance wont make a difference if your juice is too thick, as it won't wick fast enough. If anything the 0.3 will potentially burn out quicker. Where did you get your juice from? If it's from a store I'd be taking it back and asking why they sold you an 80VG juice in a tank that's clearly not suitable.
If it's the Eleaf ELLO, you want a 50/50 juice in that, maybe 60/40 in this heat.

I had one of those for a bit, in a drawer now, worked fine on all my juices at the time which were either 50/50 or 60/40.

Try with a 50/50VG juice mate. You'll have much better results.
