Reading the actual quotes, it's a slightly sensationalist headline. He doesn't actually say they "deserve" greater respect as the headline claims, he says:

I think we’re probably more respected now because we’ve qualified for a tournament and gone a lot of games unbeaten. But we’re still not as respected as much as we would all like,” he told Sky.

“So a chance to play against them is a chance to show people that doubt Scottish football what we can do

So he's basically saying, we would like to be respected more (who doesn't?), he knows there are some doubters and wants to prove them wrong, again like anyone would.

He clearly moved his right arm back more than his left. That's not simply using your arms for balance, it's a deliberate attempt to fend off the attacker in a dangerous position and a dangerous manner.
