What is the alternative? Appease Russia by letting them take Ukraine, then Latvia/Estonia, maybe have a crack at Poland too in a few years? History tells us this doesn't work.

With every Western escalation it's another reason for Russia not to resort to extreme tactics removed. When Putin gets to "what's going to happen if I nuke Kiev..nothing worse than what's already happening" then he may well do it.
What's the West going to do then? Nothing. Because they have no leverage left.

What is it with all these people with no backbone? No one wants this war, the only person escalating is Putin. If this ever did end a Nuclear attack it would be on Putin's head, no one elses. Nato and the west have no interest in invading Russia. Putin is just a megolomanic he needs to be stopped. His plan for removing Nato from his border is to invade a non Nato member and move his borders to Nato countries, Poland, Slovakia, Hungary and Romania. Mental.

Dropping nuclear weapons on Ukraine would trigger an immediate boots-on-the-ground for NATO states and then Russia would see "how bad can it get". They wouldn't stop at the Ukraine borders then either, they'd be marching all the way to Moscow

You are making the same mistake that Putin continues to make.
You keep doubting the West's resolve. Putin probably thought the west would just be too scared of him and not get involved in helping. Well guess what, they are now delivering them monumental amounts of weaponry.
It is also quite clear that in a conventional war, Russia would get well and truly pulverized by the combined might of the US and Europe. They are struggling to take a few territories of one relatively weak non-NATO member.

They're getting well and truly pulverized by the Ukrainian army, let alone what would happen if the US and Europe actually let loose.
Honestly, i thought Russia would have taken most of the country/nullified the Ukrainian military within a few months. I'm genuinely shocked at how weak and inept their military is.
