AMD and Intel trade blows in gaming performance. AMD have built better chips and have a better platform.
The platform is not as refined as Intel, as it stands. Because of this I don't think you can say it's better.

Well I've put together around 20 Ryzen systems of various spec's and configurations and I can say AMD are better than Intel. Intel have even said much.

OP - I get not wanting to make any major sacrifices when you are laying out a grand and a half for the system - but seriously a 1080ti is going to give 30% better VR performance than a 1080.
I would drop to either a 6 core i5 or a Ryzen 5. Honestly 6 cores is enough at the moment, especially unlocked. But you save 30 quid going for the 2600x over the 8600k and with the included wraith cooler I would be confident you can get a good build in your budget. ( There is a pretty awesome bundle deal on OCUK with a 2600 an X370 board, ram and SSD for 354 right now.)
Either way you are going to get a significantly better platform with a 1080ti that will give you a much longer lasting platform. If you go with a 1080 or a Vega 64 you are going to be much more severely tempted by the next release on the GPU side - and it is going to be a much bigger upgrade cost than going Ryzen 7nm in the future.

If your spending all that money on gaming rig you should get the 1080ti it's a lot faster than other cards and will give you much better vr experience.
The vega 64 cards are not competative right now the only people that buy them are the mega fan boys or crypto miners.
Have a look at vr benchmarks vega 64 is a very long way behind and is not going to give you a good experience.

So for my budget it’s either a beast of a cpu and a decent graphics card or a decent cpu and a beast of a graphics card.
8700k/2700x + 1080/Vega64
OR
Ryzen 1600/2600 + 1080ti

I'd probably do a little research before you go advising people how to spend money. I know the resident Nvidia shills keep repeating rubbish like Nvidia have no competition but the reality is very different.
Thats the reality. Vega is not good in vr. Most of times its slower than 1080 best times its on pair. VR loves clockspeed. Thats why I asked how many of those 20 ryzen systems are running VR
OP go 1600/2600 and 1080ti if You can afford it.
