Not sure on the first question, so I may have the wrong answer below as I'm not sure if your meaning logging into the other PC's from the WHS or from the other PC's onto the WHS.
When I use remote desktop from my Win7 Ultimate machine to log onto the WHS I use the log on name of Administrator, then the account password.
I used to try the username I'd created on the WHS, but couldn't get that to work.
As for copying files, I presume you mean from your other PC's onto the WHS? yup, very simple
If so, when you install the connector software on the other PC's it should have placed a shortcu to 'My Shared Folder' on to the desktop of these PC's? If so open that up and do standard copy(cut) and paste that way.
If you don't have that shortcut, go into explorer and in the menu bar type in \\WHS (where WHS is the name of your WHS). That should then show you five(?) folders Public, Videos, Music, Photos and something else. Again then you can copy and paste. You can also map a drive from each PC if you want to any of these WHS folders (or subfolders).
As for where does it put the data... Ok,
In WHS, it will created two logical drives (C & D) out of the pool of drives that you put in. WHS then manages itself where it puts the data onto which drive. So it will spread out, the interesting part then comes if you switch on Duplicate Data options for any of the folders (which I recommend for stuff that is essential to you). WHS will then make sure there are two copies of this data across two physical hard drives, so you have a form of secure back up. To the best of my knowledge there is no way you can manually manage what goes onto what disk.
