I happened across this project by chance when watching a video on medieval education and literacy rates. I'm found a playlist and will watch them all, but here's a random episode. The project is a wonderful idea - they are building an authentic replica 13th century castle from scratch and they really mean the "authentic" part. 13th century design, 13th century technology, 13th century absolutely everything in every respect from start to finish. They planned on it taking about 25 years and they started in 1997, so it's close to complete now. They left a package under a stone to explain it to possible future archaelogists arguing over the dating of the castle
