DCS works fine on my 4080s at 1440p max setting? do you have a system problem
I'm on 4K. No problems with the system. Apache + the Marianas map instant action mission begins at 17Gb VRAM and in a few minutes reaches 20+, although this may go down depending on where you fly. It goes up and adown, but always way above 16Gb.

Im just waiting on the PSU now as just got an email saying card is in. They say they dont know when the psu would be in stock so you think

version of the psu be good enough for this build and future builds?. Originally i went for the 1200w version so this is just below.
 
I would suggest you look at 4090 than the atrocious 5080.

The 4090 is old tech and might be more stable now but in a year time or so that will change and people say. Why did you get the 4090 then. The 4090 still expensive too so might as well get new tech now and when the 6090 or even newer AMD cards come out the next gen i will upgrade this PC then.

What resolution do you game at? If 4K+ or VR, then see my posts above. The fundamental problem of the 5080 is 16Gb VRAM. For flight sims, I would narrow the choice to 3090, 4090 and 5090 (also AMD has some cards with 20Gb+ VRAM, but then you lose RT and DLSS). The fundamental problem with the older cards is their lack of warranty, although this depends on the seller.
