8800 GTS offers very similar performance to the current 7950 GX2. Except its only one core and has all the added DX10 support making it far more future proof.
8800 GTX is a lot quicker than 8800GTS/7950GX2 and I am talking quite a bit faster, not just 2-3fps but more like 15-20fps in some cases.
Also at the moment SLi on 8800 series is hard as its not implemented in shipping drivers, but new driver release should sort this or some hacking.
Also something we've noticed is with the 8800 series image quality is noticably better better than the 7900 series, its even better than the X1950's. So big thumbs up to NV as to me image quality is more important over performance.
