Just made 4000 kilos of 90% cacao tonight before we had problems with a conch. That stuff is sticky as hell I really hate it when its on the schedule.

Got over 30 kilos of freebies 2 weeks ago, sadly 17 kilos of that was white truffles. All my mates were well pleased though ;)

Bourneville Dark chocolate or anything that's above 65% cocoa. Is it true that a high cocoa level can effectively protect against cancer?
 
Asda do a value milk chocolate, its about 20p a bar and its pretty good.

Personally though, I like all chocolate. I like to think of white chocolate as a 'treat' though because it's the sickliest in large quantities.

Not that I actually like much Tesco, but this is spot on.
 
I've been looking for a posh milk chocolate and think I have finally found one. Have a look at Milk of the Gods by Willie's Cacao. It has a really pungent aroma and is strong but not overpowering when you eat it.
 
I think American chocolate makers add stuff to the manufacturing process to prevent it melting at room temperature over there. This gives it the waxy, powdery texture and the tart-ish flavour. Chocolate made by British companies is sold all round the world though and keep well enough at warmer temperatures, but companies like Hershies did not want to pay Chocolatiers the rights to imitate the manufacturing process, so has always produced chocolate their own way to save cash.

My favorites are either really, really bitter dark chocolate or Ferraro Roches if that counts.
