Knife Thread

I have a Wusthof (non-sharpening) steel these are good, and should be somewhere in your kit.

On UK freeview, Blaze channel (whatever that stands for) saw 'forged in fire', where contestant competing in the design/forging/annealing/grinding ... of knives - interesting craft to see in action.
 
A strop is your friend in most cases to keep a keener edge. I made a little hunting/utility knife last year that has had a lot of use.
I've never had to sharpen it with stones yet, just a few passes on a strop after use brings it back to shaving sharp.
Or just a few passes on a high grit stone once a week.
 
I was lucky enough to receive a set of Global Knives for xmas.

Now want to ensure I keep the edge and avoid damaging them in the process.

I picked up a minosharp plus 3 based on the fact that Global recommend it and tested it on some old knives - seemed to do a pretty good job at restoring the edge on them - at least far better than me with only a cheap steel picked up years ago from a kitchenware shop.

Question is now is it worth picking up a whetstone or anything else and if so what would you recommend?
 
I had recommended one - ironically the two parts came apart/unglued - no big issue - probably dries off faster

I've got this and seems to do a good job, or at least as good as my skills are....

I just picked up the damascus utility knife in the Tesco GoCook Range

for the money I just paid for it, its impossible not to be a good deal

Got myself the set of these today, i'm by no means a particularly good cook, but they are excellent, so much better than my previous set.
 
Hey guys/gals. i hope this is allowed and if not please advise and i will delete.

i have a very small new channel that is all about sharpening using different techniques as well as reviews and guides etc. would really appreciate some support from you guys as well as requests on what you would like to see on the channel i.e. a specific way to sharpen or how to sharpen a certain type of knife. im happy to feature all sorts of knives from kitchen knives to hunting knives, even axes and swords.

As far as I'm aware. But it's not a big deal. You just have to go collect it, from your parcel place and show Id. Not that it's going to do anything to reduce knife crime.

Yeah, because all those inner city gang members are buying £50-£500 chef's knives and using them to stab each other with. And buying them online and getting them posted to their home addresses. They are definitely not taking whatever cooking or steak knife they find in their mum's cutlery drawer. No doubt a ban on online shopping will prevent all this cookery related gang violence completely.
