I don't think it will be too bad that you left it out initially, so long as you still tell them, I think it's completely understandable that you weren't sure the best course of action was telling them. But it is, and you leave yourself at risk if you don't.

So he was parking somewhere he shouldn't and you politley asked him to move, which made him grab you by the throat.

Relax!

He's not going to do anything, the fact that he reacted like he did means he thinks he's something of a hardman, the fact you headbutted him has shown him that he's not actually that hard at all, and the fact he ran off means he won't report you as it'll prove to everyone who knows him he's nothing more than a coward.
 
You reported the incident, but failed to mention you headbutted him?

Now if they find out the truth your statement will hold no weight. Congratz.

Yeah, but he won't! If he reports you, he'll lie about grabbing you by the throat, but you can bet your boots he'll detail the headbutt and he'll have a splattered nose to prove it. Unless you have marks on your neck, where's your proof?
Without witnesses its not likely to come to much, but your employer may feel some pressure to act. Fingers crossed you don't become a scapegoat.

You should have said:
"When he grabbed me by the throat, i tried to kick him in the ovaries, but then i remembered he wasn't a girl, so i nutted the motherflinger!.........your honour!" :)

And all will be well, case closed. :D
