Surely quality is subjective? What are the defining characteristics or metrics used to measure quality of one track to another?

Geometry complexity, number of objects on screen, the lack of a skybox etc. are objective measure of graphical quality.
 
Recently got MK8, like Mario Odyssey it's exceptional. Christ knows how Nintendo get games to look, play and perform so well.

Makes Crash 4 feel like a slideshow in comparison.

They spend almost as much time polishing games as they do the core development. Most other developers just bung it out when it's pretty much done and patch the big issues post launch.
 
It also helps that (generally speaking) the first party games have great gameplay where I can forgive a bit of graphical fidelity. I'm not so concerned about how detailed a track is as long as it looks decent while I'm power sliding my way into first place :p
They did a great job with the tracks on MK8 and in single play performance is great. If you do get a local 4 player race going then it can get a bit framey, would be nice if they dropped a bit of the detail in that instance to keep frames up.

4 player is a locked 30fps with no frame drops IIRC. 1/2p is 60fps with occasional dropped frames.
