That's the whole point of the save/time system - you cannot do every case in a single sitting.
You could in the first one (I did it the other day, doing every case and beating every psychopath), but you need to be level 50 ideally (so you're as fast and strong as possible), and need to know the game inside out as you need pretty much perfect time management. It's not impossible but it was certainly hugely challenging. When I hit level 50 in DR2 I'll be trying to do it here as well to see if it's possible

However, Dead Rising 2 isn't designed to be finished in your first playthrough. You're pretty much guaranteed to fail the cases at some point, or die because your character isn't strong enough. I've already had to restart the game once as I mistimed how long it would take me to do the first case and ran out of time. Instead of reloading a save, I restarted the story so I could keep my character level, and it was much easier 2nd time around, saving most of the survivors I've been told about so far, and doing the story missions in good time.
If people are having trouble with it and failing missions, I'd always recommend restarting the story off instead of trying to reload an earlier save. The additional character levels you'll keep are well worth it, especially as by level 12-13 (where I think I am) you'll have a decent amount of health and can carry 6-7 items at once, which makes it much easier to prepare yourself for the zombie horde.
