Did some beef ribs earlier

applied a smokin' guns BBQ rub overnight then smoked for 6hrs at 110C before leaving in foil for 30mins with a very meaty beef BBQ sauce:

Those look incredible. I really need to get some beef ribs made sometime.

Tomorrow I'll be putting a nice sized brisket in the smoker before setting off to sort things for the new house. Fun times :)
 
Those ribs do look very tasty. :)

The Weber bbq I ordered almost two weeks ago has finally been shipped, perhaps I'll actually get to bbq something soon.

They look good! I did 4 beef ribs a while back, cooked them for 5 hours and boy were they good. Unfortunately my wife wasn't very well :(, so I had to eat them all :D. Tempted to do ribs at the weekend now.

Just done a rather large order with ELSCo that will be delivered friday. Not sure how much of this i'm going to cook:
Bone-in Brisket :: 2kg
Rump Cap :: 1.5kg
Pork Belly :: 2kg
Pork Butt :: 2.5kg
Ross Chicken Wings :: 1kg

Tearing/chopping, cleanish bone, tastes great, would have liked another few hours though. I did shred/chop if finer, but that pics really blurry, added some cider vinegar and some of the rub in after.

Maybe not to everyone's liking, but low carb. So iceberg, onions marinaded in lemon juice, pickled chilli, cucumber, chilli sauce, garlic mayo and a big mound of pork.

Can tell the pork didn't have any sugar in the rub, it hasn't caramelised. Where the duck has ketchup as well as soy sauce and other stuff in it.

Can't wait to try the duck tomorrow, more excited about that than the pork.

Oh yeah the reason you see a second thermometer, is I didn't believe the first. But it wasn't the thermometer that was wrong. It's just Tesco briquette charcoal is amazing. 5hrs ZERO top ups. Purely amazing. It's better than weather or the Australian heat beads I like. I hope this wasn't a one off lucky bag.
