Field wasn't as strong as I'd raced earlier in the day, but I'm really pleased with how consistent I was! Scares me with all this talk of how hard the Skip is to drive, but I'm a long way off getting my license anyway.

Congrats, I remember my first iRacing win, although it was an oval, oddly don't remember my first road win ¬_¬
I hate this game I am constantly spinning out and finding it hard to control the cars, I swear I go same speed or slightly slower follow almost the same line and I spin out.

How have you got into a race on that track? I only seem to be able to find oval in the stock and mx5 cup on laguna seca.
Ignore others pace and just go at your own pace, most likely you're being 'too harsh' with your inputs, even just steering too quick can unsettle the cars, you just need to be smooth.
Try taking a few laps at a slow-ish speed (but not ridiculously slow) and just concentrate on hitting various points that you think is 'the right line', that includes being as close to the edge of the track as you can when turning in, apexing (can you ride that curb or do you just want to brush it) and unwinding the steering so that you you just brush the outside of the track on the exit.
Then watch the replay (and/or post it here) and critique your lap, being smooth and on the right line is probably the most important 'technique'

Just about to have a go on Iracing tonight could anyone give me some advice please.
The advice is do you brake and gear down before a turn or gear down then brake.
Any info on G27 settings would be great what settings do you use.
I've never drove a car in real life so have no idea about the above.

As said you effectively do both at the same time, but braking always comes first or you'll overrev the engine,
To start with I'd say go nice and slowly, start braking before waiting a while downshifting once, wait another short while and down shift again etc etc.
Once you get used to it you basically need to compress that, and you learn how soon/quickly you can downshift, cars like the F1 car it's basically as fast as you can move the paddle, cars like the mx-5 are slower...
