It will have to beat my 9700K in UHD gaming by some margin for me to buy.
That is looking to be extremely unlikely - nigh on impossible. ;)

In a few games my 9700K is on par or slightly faster than my 5800X with PBO and CO at 5.05Ghz with 3800C14 RAM.
If you haven't already I'd see if you can get a decent clock out of yours and get your RAM speeds up as that can give a decent margin in performance. PM if you need any advice. :)

My 9700K is @5.2 GHz and I only play in UHD with a 3090.
I was looking at getting 3600hz ram.

what’s been your general findings now, comparing performance to your 9700k, that you’ve had some time with the 5800x?
 
Which one are you going for? I’m probably 11700k.
I also have a z590 and pcie4 M2 with a 3090 hence holding out for the 11 gen.
I’m coming from a 6700k so hoping for a serious performance boost.

11700k or 11900k don't know yet? It depends on price? Looking to install 2 pcie4 M.2 myself. The 6700k is still a good cpu, but you should see a good bump in performance.
