Home made chilli. With salad and taco shells.

2 onions fried with 2 small cloves of garlic.
1 pack stewing steak, chopped to 1cm/.5inch cubes browned with onions.
500g mince beef fried separate then added to the pan.
seasoned with salt and pepper.
0.5 can of beer.
1 teaspoon of each: coriander powder, paprika, drinking chocolate, oregano, cumin, cayenne pepper, brown sugar.
2 teaspoons of chilli powder.
Can of chopped tomatoes, few squirts of tomato purée.
Can of kidney beans, one chopped green pepper, one chopped red pepper (I used a long sweet pepper).
Season to taste, simmer until ready to eat.

Salad with all the bits or what you have available. I used taco shells as I fancied them but you could just as easily use rice or tortilla wraps.

I made a little 'sour cream' with natural yoghurt, mayonnaise, lemon juice, salt.

Lunch today was some home-made pasta salad (with some Waitrose mini pork pies)

Pasta salad has the following ingredients:

1x Red Onion
1x Red Pepper (roughly chopped)
1x Yellow Pepper (roughly chopped)
1/2 Jar of Olives stuffed with Jalapeños sliced
1/3 Jar hot Peppaesdews in vinegar chopped
4-5 Gerkins in sweet vinegar chopped
1x pack Wiatrose cherry tomatoes

Dressing
1.5 teaspoons crushed chilli
1.5 teaspoons crushed garlic
Extra Virgin Olive oil & vinegar (from the peperdews and the gerkins) in a ratio of around 4 parts oil to one of vinegar.

Freshly ground black pepper added at serving. Mades enough for at least 6 large portions.

Heading out to the pub so needed a quick, cheap, tasty and filling lunch to set me up for the day. Intended to use filo pastry and make some spring rolls but the local tesco had none. Stepping into the breach came some trusty tortillas.

Ingrediants: stir-fry pack, precooked prawns, chilli sauce, ginger, tortillas.

Stir-fry the veg for a few minutes, chuck in the prawns, grated ginger and chilli sauce and cook for a minute or two.

Eat.

Terrible photos but it tasted excellent and could easily fill 3 people for around a fiver.

1lb Pork Mince
1lb Beef Mince
3 onions roughly chopped
10-12 button 'shrooms 1/4'd
2 cloves garlic pressed
handfull of finely chopped birds eye chillis
2tsb cayenne
2tsb ground cumin
2 tins chopped toms
1 tin of red kidney beans
1 tin of cannellini beans
one beef oxo cube in 300ml hot water.
1 small potatoe cut in to small cubes (will help thicken sauce)

think thats it really, cook on hob for approx 3 hours

Afraid not, it's just something I made last night.

I used:
150-200g chicken breast (per person)
Mix of Cambridge Chilli Farms Sweet Chilli (hotter than most) and Asdas own
Cabbage
Beanspouts
Jullienned carrot
Fresh edamame beans
Cashews
Spring Onion

Heat up 1-2 teaspoons peanut oil in a wok med-high, butterfly and dice the chicken into strips. put the chicken in along with some cashews, cook for a few mins then add the sauce and lower the heat.

Chop the veg up whilst the chicken cooks for a couple more minutes, making sure the chicken is covered in the sauce, add the veg minus the spring onion, little bit of salt or soy sauce.

Few more minutes for the veg to cook, put on plate, add spring onion on top. Takes about 8-10 minutes and tastes pretty good although I'll have to make my own sweet chilli next time :)

Lovely thick chicken breast stuffed with haggis, wrapped in smoky bacon, on a bed of black pudding. Side of new potatoes and covered in a peppercorn sauce.

Tasted great though the breasts were much larger than I was expecting to get so was totally stuffed!!

Sea Bass and Soupy Rice



This picture was the first time I tried to cook it and since then I have refined the recipe namely by doing away with the saffron. I cook this at least once a week but most times I cook it with King Prawns or Squid instead of Sea Bass (to expensive I only use Sea Bass when I'm throwing a party).
