I've seen her recently presenting "The Center Stage" so I know she's gone more gaunt-looking.

I don't like the ship designs. They seem to have gone for a blocky / JJverse look but they don't look very good, they just don't flow.

It's also weird that they still have a Sovereign-class in the background of the last shot of that trailer. They look so much more elegant.

I'm not sure which ST universe Picard is supposed to be set in?

It's set in the normal universe. That new Titan ship design is very much based on TMP refit styling with a little bit of TNG thrown in. Nothing at all to do with JJ. Even the classic space Dock is there. A design we've seen for a long time.

The D wasn't completely destroyed, it could have been transferred.

This. Plus the Ent-D had three separate computer cores, increasing the odds that at least one survived the crash landing on Veridian III with intact/recoverable memory.
