Does anyone know how you change the PS4's network ID to show something other than "UNKNOWN" when it's connected to my Sky hub?

It still comes up as unknown. Same for the PS3.
Bitstream is compressed LPCM is higher bit rate and should sound better. It all depends on your setup. Try them all and see which sounds best for you. Both are multi channel.
