Is it common for scores to jump up and down by a few hundred even if core settings aren't changed?
Not normally, if the settings are unchanged you may get a difference of 20 or 30 points.
Just a guess but if you are getting a very big variation in scores for the same settings, have a look at your temps/cooling.

I set those clocks but when I came out, I noticed the Core had boosted to 1143Mhz but memory was the same. Just giving the info of what is what

So two titans overclocked are nearly double the performance of a stock 690 in this test ( 120.4 vs 64.6)? That's not bad at all.
That's the way it seems to be working, if you overclock a Titan it gets very close to a GTX 690 @stock.
For a single card that's very impressive!
