isnt this the same thing with sanwiches that are cut into triangles taste better than square ones. I remember a huuuge thread about this ages ago.

i must agree though, i do prefer grated cheese!

BUT, when melted the surface area is no longer greater... yet it still does taste a lot better !?!?!

The reason is simply that, you are increasing the surface area and therefore the melting area. Melting area is equivalent to flavour perceived on the tongue and in the mouth. So because you have more cheese effectively touching your taste glands you feel as though the flavour is more refined and more intense.

Of course this call all be complete twaddle.
